Looks like a good site. I, too, absolutely love beets any way they can be fixed. In the beginning I made small amounts of kvass like most websites and videos said. At that time I was getting beets at a local farmers market. A few beets here and a few there I could keep fresh kvass going. It was after I was forced to make a lot at a time that I learned I liked it much better after it set in the fridge a long time.

When the beet season was over I had to find another source. One curb market would order them for me but I had to take the beets in 25 pound bags. I had no idea how many beets were in 25 pounds so I got 2 bags. Now 50 pounds of beets will make a lot of kvass. Cut into chunks I can fill 12 one gallon jars. Through experimenting to see just how many batches I can get, my last time I got 5 batches and that made 25 gallons of kvass. Not too much really, I drink 2 1/2 gallons each week. I even bought an extra fridge ($50 at a garage sale) to put in an out building for the kvass and goat milk.

Good luck with it and I hope you enjoy it as much as I do. By the way, you will go to the bathroom in living color. Do not be frightened, it is not internal bleeding. Interesting colors................
