Coconut oil is less than 10% Palmitic acid... and the good FA's more than make up for and even completely surpress the negative effect it might have.
http://www.ncbi.nlm.nih.gov/pubmed/16126172
"Low concentrations of oleate (0.1mM) completely inhibited palmitate-induced oxidative stress, SAPK activation, and apoptosis."
Coconut oil also has 10% oleic acid.. :)
Not to mention it's half lauric acid... which does not need any sulfur from bile to be broken down... does not need bile at all! :)
Plus, there's a whole nother host of problems with a study that most likely used pasteurized, homogenized milk for feeding the rats... These fats are very denatured and have been turned toxic.
EDIT: Looks like we agree on olive oil though... I think that's the one thing I've never seen anyone say anything against :)
