I should have added in my post that my husband and I take coconut oil capsules everyday. In my case, I add 2 TBSPS. flaked coconut to my morning oatmeal---mainly because it helps with my IBS-D. In the evening, I take a coconut oil capsule. My husband takes 2 capsules a day. Here is a link that explains how coconut oil is helpful for those with type 2 diabetes:

Some oil in the diet is necessary. There are good oils and bad oils. Good oils are beneficial.
As for carbs --- this is my personal take and experience --- We still have some carbs everyday. That's why taking prickly pear cactus capsules is helpful when it comes to lowering blood sugar:

All that said, while we do have carbs on a daily basis, we don't overdo it either. As for how to deal with carb cravings? Once in a while, I do crave carbs. When that happens, I will have a small amount and remind myself not to overdo it. Some carbs in the diet is a good thing but like anything else, moderation is the key.
Good for you for taking the time to do such thorough research! I know that you will find the diet that works best for you.
