I am not a total raw foodist, but I do try to eat quite a bit raw. I like to make things in advance, like making gaspacho from various vegetables with the blender. If I fill the gaspacho to the very top - to keep out oxygen - in my mason jars, will the enzymes last in the refrige for a few days. Do you know?
