I too have read the 1988 Crapo article now and came to the same conclusions you arrived at. I was quite surprised that such a bold statement had no references! Thanks for your clear run-through your critique :)

Still haven't been able to get my hands on the other Lee & Sue (1989) article.

It does seem likely however that if there was some real risk involved in xylitol consumption, more research papers would have been conducted and published in more recent times than the 1980s papers that the webMD statement is based upon.
