Hello,
I am new to this forum and I hope I am posting this in the correct way...
Anyways, I bought some water kefir grains on Amazon, and I also bought some 1.5 quart mason jars [they haven't arrived yet, and I can still return them].
I decided to buy the 1.5 quart jars because most recipes I've seen are usually for a quart, and then there are other ingredients to add as well. However I just now noticed that most of these recipes also say to leave an inch at the top of the jar because this is the amount of air it needs to ferment properly. Do you think there will be too much air in the top of my 1.5 quart jars if I use a recipe that calls for 1 quart of water? I know I could just alter the recipe, but I'm really curious about the amount of air needed, and especially since I'm new, I want to really stick to a tried-and-proven-effective recipe before I start messing around to get my own recipe. Should I return the 1.5 jars and get something else?
Secondly, I want to be able to store the kefir for a long period of time...that way I can have kind of a collection of different types/flavors of kefir and always have different types to drink or offer to other people and give 12 packs to people as christmas presents, etc. I know that to keep the grains healthy I would have to make kefir every day so there wouldn't be a shortage so to speak, but I really want to start a collection. Is this realistic? Does it spoil if you leave it too long? I've read in some places that storing it for too long can cause it to get too carbonated and the pressure can make the glass shatter.
Also, and this is really important, I'm a recovering alcoholic and I've seen the alcohol content of kefir covered in other threads, but I just wanted to make sure that if I stored it for this long, that it wouldn't become more alcoholic. I really would like the probiotic boost and also I currently drink a lot of soda and intend to use kefir to help me quit. Under 1% alcohol is okay for me, but much more than that could be problematic.
