1 carrot + 1 Tablespoon of raw hummus = pasta by chirontherainbowbridge ..... Raw Food: The Vegetarian/Vegan

Okay- I have to admit, the hummus was not actually raw, but I HAVE made raw hummus in the past. It was good, I just don't have the right kitchen equip. to make it smooth as I'd like.

But this was VERY good! the hummus is spicy with chipotle
and coriander, and the carrot is just peeled into ribbons of linguini thickness with a veg. peeler, then marinated (to soften and take the chill out) for a few minutes in a touch of cold pressed EVOO. < extra-virgin olive oil, and a few grains of Andes salt.

Then tossed in the hummus. Very satisfying.

then there is raw butternut squash, noodles made the same way. I have not tried these, yet. I have a bit of a concern about the bitter aspect...the possible 'anti-nutrients' in the raw squash. I don't know whether I'm just thinking in the old-paradigm way, that such things are meant to be cooked, or not. Would love to hear experienced thoughts on this.


My all-time favourite raw pasta -thus far- is zucchini fettuccine, with either a kind of alfredo- or a tomato and date sauce. One thing I find with eating raw is, too much energy! Sounds crazy, but it hppens--and it's as if you start to kind of short-circuit. I can how people 'dampen down' (slow down) their energy with junk foods, as a way of being able to fit into the prevailing zeitgeist, if you will.
