You should listen to your body while making the healthiest choices you can. I need some carbs. I am one of the rare people whose hypoglycemia is worse when I go too low carb and my NB practitioner respects and supports that I don't follow Dr Wilson's recommendations exactly.
I also wanted to point out that many times it's the copper toxicity that prevents people from being able to digest meat.So that may improve for you.
Just try to eat the veggies you can. Your thyroid issues will likely improve while you are doing NB as well.
