Not sure I would call that tricky..

I mean, temperature during fermentation, yogurt or mead its basic stuff...

You can't restart any of those batches the enzymes from the Vervaine won't allow that.

Also you don't need Vodka for a fermentation lock only distilled water. With that yeast you should be seeing the lock dance within just a few hours.
