I had been following a vegetarian diet for the past 4 years or so, mainly based around brown rice and various beans and lentils, plenty of vegetables, I felt very good on this diet but I would never recommend a vegetarian diet to anyone as this is really only for people who are naturally inclined to not eat meat. I have been living in India for a while and had malaria about five months ago and the doctors recommended that I add some eggs and fish into my diet, so I've been eating that as well recently. See my post regarding the Indian food kichati, which is basically a rice and bean dish that is delicious and very good for all people that have stomach and digestive ailments.

Personally, I could eat this every day it tastes so good to me but I am used to Indian food and spices.
Again doesn't really matter what you eat, choose a diet of whole foods (no junk obviously) that feels good for you, just whatever you choose to eat make sure that it is giving you more energy and hopefully helping you to gain weight (as you are underweight). Always the more energy you have, the healthier you are, this is true 100% of the time. People who tell you it is good to eat a diet that gives you tons of die-off and make you feel like crap are way off base.
