SeattleK,

CONGRATS on coming so very far! You sound like a different person than you were.

Definitely explore food intolerance issues. In his book, Dr. Lam explains how many food issues have delayed onset so you don't notice or make the connection.

I tried the Elimination Diet -

and I found out Wheat and Dairy were aggravators.

Cutting out gluten entirely was crucial for me. After two weeks I felt better and after two or three months I felt dramatically better. Wheat was causing all kinds of muscle inflammation and digestion issues. Now, if I even eat a single airline packet of pretzels, I can notice the (unpleasant) difference.

I was able to make cutting out wheat fairly painless and replace them with high-quality carbs with a Zojirushi rice cooker, made in Japan. It cooks PERFECT brown rice, oatmeal, quinoa, and millet - every time - with the touch of a button.

The only bummer is (not being able to enjoy) eating out. Restaurants and food in the USA are almost entirely wheat based for carbs. I miss living in Asia with the rice culture, where wheat and dairy were rarities.
