The effect of bitter herbs occurs through the autonomic nervous system.

So HCL is not secreted from the back of the tongue, but is secreted in the stomach.

The autonomic nervous system also stimulates the liver and gallbladder to secrete bile.

etc.

That is probably what you meant. But just clarifying.

Most herbs have more than one action. So most bitter herbs also have other actions.

For example, dandelion leaves are bitter, but also promote increased production of urine, and have a laxative action.

You can look up herbal references for the action of various herbs.
