I would like to share with everyone the recipe of a great food that is used like a medicine in India called kichari. I have been eating this for years and it has been very helpful in keeping me healthy and keeping a healthy weight (as I can tend to be underweight if I don't eat properly). I can't say that it will cure you of anything such as candida but for me it has been a very helpful food to not feed candida much and help the bowels keep moving. It also contains spices that are very helpful in maintaining proper bacterial balance.
Ingredients:
1 cup brown basmati rice
1 cup moong dal (split yellow mung beans)
1-2 tablespoons ghee
1 chopped onion
1 teaspoon cumin seed (not ground)
1 teaspoon turmeric
1/2 teaspoon ground coriander
1/2 teaspoon ground cardmom
salt according to taste
other veggies your choice, such as cauliflower, squash.
put rice and dal (beans) in a pot and wash, rinsing with your hands and dumping out the water about 2-3 times. Then add about three times as much water as there is rice and beans. Bring to boil, when boiling lower heat (can also be cooked in a pressure cooker or slow cooker). In frying pan, melt the ghee (can also use butter or oil as you like), when the ghee is melted and somewhat hot add the cumin seed and let stir it around for about a minute, it should sizzle and become dark, then add the onion and other spices and cook for a few minutes. Then add onion and spices to the rice and bean mixture. Takes about an hour to cook in a regular pot and rice and beans should be very soft (beans will almost melt), should not be too thick or too watery. Simply add the other vegetables according to how well done you like them, I usually add cauliflower or squash about 20 mins. before rice and beans will be done (if you add them at the beginning they will turn to complete mush by the time they are done). Salt according to your taste (I use Real Salt which I like the taste of).
That's it, to me it tastes great but it depends on your personal taste and if you like Indian food or not. You can add other spices according to your taste, such as cayenne and other spices like fennel seed, caraway seed, black seed. The more spices you put in obviously the stronger the taste is but they can have many health benefits. I like to vary it up and sometimes use fennel seed instead of cumin, sometimes add caraway, whatever you can just experiment. You can also add a little cinnamon and that gives a nice taste sometimes but don't overdo it. This food is considered a tonic for any digestive ailment and can be eaten for all meals. You can find the moong dal, ghee and other Indian spices in any Indian grocery. Be careful buying ghee in an Indian grocery because some are low quality and you do not want these, can have bad taste and also not good for health. Moong dal is the best bean I have come across in its whole form it is green and you can find it in stores such as whole foods but I don't recommend using it in its whole form, the Indians split it for super easy digestion and no gas production. You can also find the one that is green and split in the Indian groceries, this one is good too and probably better for health but the taste is not as good (the yellow one simply has the skin removed).
I like to make a big batch and eat it every day for lunch and dinner until it's gone, I can never get tired of it to me it tastes better than anything.
