Hey Mu-shen,

I have been doing Kombucha for 4 months already. I noticed
the color depends on the sugars I use - mine has the yellowish-brown golden color of the honey I feed it; the tea I use is organic white tea, a pinch in 1/2 liter of distilled water.
I actually find that I have more CO2 bubbles with more honey, making it more acid. So for less bubbles I put less honey.
Also honey does not really need conversing, since it is composed of elementary sugars, (mono- saccharides): glucose and fructose, while brown or white Sugar are di- saccahrides, that need bacteria to split them.
The ticker slimy matter on the bottom is rather spores of yeast and bacteria, since it is possible to start a new scooby from it. I am thinking to use the spores in my compost?? since I have more and more every 2-4 days ...
ANYONE, IS IT GOING TO HELP OR DESTROY MY organic compost?

Finally, I find that Kombucha helps joints tremendously. Fruit flies seem to like it too ... so washing the Scooby once every 2-3-4 days should take place.
