Interesting question about honey sugars, I appreciate it ... I do not find the sweetness of a tsp in a cup of honey greater than that of a ripe fruit. Overall, it should contain even less calories from sugars than a ripe sweet fruit. Bonus: good raw honey has lots of enzymes, which help eliminate build ups, if consumed alone or in herbal tea or water.
The 4 teas plus mono-fruit is producing amazing results in reversing obesity and second type diabetes, among many other diseases under the Bulgarian-type fast. Practice shows that the pancreas is not challenged. On the contrary - the high insulin levels and blood glucose are steadily dropping, because the low calorie diet/fast, even more the low/zero fat have the effect of sensitizing back the cells to insulin, such that less insulin is required and more glucose enters the cells. Fructose, which honey is very high in, does not require insulin, so pancreas-wise the fructose contenent is out of concern. My reference is again emilova.org. There are on-going studies, showing over and over again the insulin insensitivity comes from high quantity/poor quality fats, which "crowd" the insulin receptors.
I would believe that the two tsp honey a day, being too much refers to a "rich" diet where the honey-tea doesn't come as a meal, rather as a surplus ...; even more so if the meal/the day have been high on fats and honey came mixed with other food. Do you have the info-/ web-page about the honey/pancreas concern, I'd love to have a look at it, if possible.
Anyway, full rest of pancreas clearly is achieved through water fasting. For people who have trouble water fasting, honey-fruit is a good alternative. Personally I have never had complaints from challenged pancreas through my 3 long soft fasts (14-16 days), and through subsequent short ones.
It is true that the body gets used to having some fuel every two hours or so, after which switching to 0 calories could be a challenge. I am thinking to do the opposite, when time comes - starting water only and breaking with soft fast, then adding greens and veggies when I re-feed.
