I suppose this is not really the forum to discuss the advantages or disadvantages of diet per-se, although relevant to post-fast and pre-fast health/nutrition of course.

I personally believe in approx' an 80% raw and 20% cooked diet because of digestibility issues with cellulose, which is only metamorphosed or softened to enhance the digestive process. Steam cooking for short periods will mostly preserve intact the nutrients we need of those vegetables that are hard to digest otherwise; many are not keen on the idea of eating raw cruciferous vegetables such as broccoli, cauliflower and so on, or even eating potatoes in their raw state either.
Some nutrients are indeed enhanced by cooking, as in cooked tomatoes which enhances their lycopene content. This may be an informative article for many..................

Also, whatever our opinion may be on grains, there is much to be said for consuming sprouted grains as you have mentioned, which have huge health-benefits. I personally believe that the consumption of some whole-grains as part of our diet, are hugely beneficial in the prevention of heart disease, cancer, and diabetes. The problem with allergies and gluten sensitivity in eating grains, is the failure by most people who consume these starch-based foods, to masticate their food thoroughly enough with saliva, producing digestive issues. This in turn is exacerbated by eating acids with a protein at the same meal. A recipe for digestive ailments.

I eat wholewheat bread lightly toasted to convert the starch into digestible sugars and have never had any digestive issues as a result.
It is absolutely true of course that enzymes are destroyed by cooking, and we have to weigh the pros and cons of both, but I am of the opinion that the enzymes we receive from the rest of our diet (80%) is more than enough to compensate for this shortfall.

Everyone to their own, and the subject of diet is complex. No disrespect at all DesertLili, it is good that you have disagreed with me on cooking, but that is very healthy and welcomed. I wish more people would challenge my views.
