Another way to good health but the GI method is the way I chose, it's simple and it works.
Except it is based on a lot of false premises.
First of all the cholesterol is response to inflammation, not the cause of inflammation.
Secondly, the blood RARELY every goes acidic. The body has various, redundant methods of maintaining its pH balance. Respiration is the main means. There is also bicarbonate, kidney reduction of hydrogen ions, etc. Buffering by bones is a last resort. But again, for the blood to actually develop acidosis is so unlikely, except in rare cases such as poisoning of diabetic ketoacidosis, that you would likely never see a true case of acidosis in your lifetime.
Third, what you eat has very little influence on your pH. Acids are buffered as soon as they leave the stomach and again the body buffers acids through a variety of mechanisms, but primarily through respiration.
And let's not forget the fact that acids keep calcium in solution. Calcium is precipitated in an alkaline environment. And what is arterial plaque? Calcified cholesterol. Therefore, you would be more apt to develop arterial plaque by alkalinizing the blood causing the calcium to precipitate out.
