But what about dealing with the root of her problem? What do you recommend for sensitive teeth? Or are there so many causes that you cannot recommend a specific thing?

The clove oil is best for sensitive teeth.  Silica can also help in some cases, but you are right.  Without knowing the cause it is hard to say what else can be done specifically.
