Ive asked Jeff about potassium sorbate and he does not exactly recommend it for daily use because it might interefere with the enzyme/metabolism activity of certain flora/beneficial yeast.

I have used it occasionally with great success to shut down the fermentation process due to extreme bloating or used it for the occasional holiday or eating out  with no no foods. Wikipidea has some good info on it. It says that up to 800mg can be used in a day.  It might be helpful temporarily for people that have extreme bloating/fermentation problems...Just to get some of their energy/calories back. I gained 10 lbs in 2 weeks using it ...when i felt like my bloating was extreme and my energy was low. Potassium sorbate  seems to work better in a acidic ph environment. Sometimes if i took it with a meal that was too alkaline or too much calcium in the meal it seemed to be less effective. Ultimatley, foods that cause fermentation need to be avoided, but sometimes it seems as if candida can digest anything.
