Indigoaura, u are a godsend! U have given me such awesome advice...I really appreciate the time u have taken to write such thoughtful responses! I wish I had your number...I have so many questions and would love to pick your brain for hours, lol. Your knowledge astounds me!
1. I'm still confused as to the difference between SCD and GAPS. What worries me is that SCD says that any probiotic strain other than acidolphilus (and those that are in yogurt, as well as sacro B) can contribute to overgrowth and SIBO (small intestinal bacteria overgrowth). Is this true? GAPS seems to promote multiple strains of bacteria/yeasts. SCD definitely does not recommend kefir... How do I know which diet would be best?
2. My infections are heavily biofilmed, thus I worry about introducing kefir (which u said contains 100s of biofilmed yeasts and bacteria). How do I know these won't turn pathogenic? If these migrate to the wrong area of my body, they will definitely be pathogenic...
3. So u did not do the GAPS in stages? I thought there were several stages involved?
4. I doubt I'll react poorly to the intro. I've already been low-carb and sugar/fruit/yeast/gluten/dairy-free for a long time (save for some rice protein powder and rice cakes). But, I kinda want a die-off reaction so I know it's working! :-) So the intro is just broths and chicken soup? SCD allows fruit juice and eggs and honey on intro...I def can't do those.
5. I love veggie juices. Mine are usually a mix of celery, cilantro, cucumber, spinach, and other leafies (romaine, red leaf, sometimes red cabbage...). The spinach gives it an almost buttery flavor and thick texture. DELISH! I tried dandelions before, but they tasted bad and I think I reacted to them.
6. How do u use the VCO? Do u use 2 TB for lunch over your greens? Do u cook your breakfast with it? (You do eggs for breakfast, right?)
7. I buy my chicken from Whole Foods...is this good chicken to buy? Or is this fed soy and corn? I also get my turkey from Trader Joes...is this ok?
8. I live in an apt, so i def cannot have chickens. I wish i could. There is a farm co-op that sells them every 2 weeks, but a dozen costs 4.50! Yikes. I buy my eggs from trader joes, but I know they probably are not pasture-raised (even though they are organic and free-range...do they still eat soy/corn?)
9. Did u have issues with dairy before and are now able to tolerate it or was dairy never an issue? My life would be so much better if I could tolerate dairy...I want to do yogurt SO badly, as well as raw milk kefir. I tried raw milk kefir and raw milk yogurt from the co-op, but I still reacted to it. It probably was NOT fermented 24hr, so lactose was still in it.
10. Thanks for the tip on making coconut water kefir with fresh coconuts. It sounds like a pain to do though, lol. Is this something I should wait to do until after the Intro Diet?
11. How do u make kraut? I currently am slowly introducing Rejuvination Foods Raw kraut (from whole foods), but it is expensive.
12. How do u make coconut meat yogurt? I've tried making homemade nut milk yogurt and it failed every time. What probiotic do u use as a starter? Any tips would be awesome!
13. I would LOVE LOVE LOVE to get off my supplements, especially my digestive enzymes. I spend so much money on these, and like u said, who knows if they help?! I'm trying to take only the necessary:
-HCl/Biogest for digestion
-Vit C 1g 4x a day with meals
-Zinc
-Vit E
-occasional B12 shots (no intrinsic factor, thus I'm always deficient)
-probiotic (would love to just get the good flora from foods!)
-Interfase enzyme (supposedly breaks the biofilms)
-mag/cal/D (helps with BMs...stupid GI system!)
I used to take a TON more.
14. it scares me that no matter what I eat, it will feed the pathogens. Protein feeds them too? Jeeeeez! 3 days of intro doesn't seem long enough to starve the massive amounts of ickiness in my body! I think I'll need to shove a power washer up/down both ends of my body, lol.
15. I don't tolerate ACV...I have an allergy to apples (among many other foods).
16. For the almond pancakes, how exactly do u make these? Have u tried coconut flour pancakes?
17. I've heard of people raving over kale chips, but have never made them before. I have an excalibur dehydrator..I need to bust that thing out and put it to use!
18. the cauliflower faux-tatoes sound awesome! Do u do the Dry Curd Cottage Cheese that SCD recommends?
19. Did u react to kefir at first? How did u introduce it? What is the reason u don't do yogurt?
20. Does ur husband eat this way, too? I'm going at this all alone...it would be nice to have someone who is in this with me. :-(
21. IDK if I am reacting to eggs. Whenever I eat them they feel so heavy in my stomach, and sometimes I get gassy. I soft-boil them so that the yolks are runny. A few years ago, I did raw egg shakes with apple sauce (2-3 raw eggs, 1/2 c apple sauce. put in blender...SO delish!)...but that was before I had to avoid fruit and apples. ugh, I miss fruit!
Here is my current diet. What would u recommend I tweak/add/delete so that it is GAPS-friendly (I know I need to do the intro first, but this will help me figure things out a bit. I am awaiting for my books on GAPS to arrive before I dive in...I want to make sure I do it correctly, for I've done radical diet changes before and end up really sick):
meal 1:
4-6oz homemade green veggie juice
1 organic brown rice cake
2.5 TB rice protein powder +1 TB coconut butter mixed with 1/2 TB almond butter (add a bit of water to make into a spread to put on top of the rice cake... it's essentially a protein-packed nut spread)This is SO delish, but probably not GAPS-friendly :-(
Meal 2:
Stir fry: 3oz chicken breast, steamed veggies, avocado/pea non-bean "hummus" (used as a "sauce"), spices, 1 TB VCO, Sea Salt
Meal 3:
Same as meal 1 without the juice
or
2-3 jumbo soft boiled eggs, maybe some carrots
meal 4:
Same as meal 2, but with turkey breast
It's not enough cals and IDK how to change that. I'm already SO full on this amount of food (yay for gastroparesis).
