That's the first thing I expected, too, before I tried it. But the holes are small and the mash is compressed into an an adobe-like,very dense and dry block so the fluid is not re-absorbed into it. Also, upon the release-of-pressure, you slide the platen down and remove and separate the stack of bowls almost instantly. Finally, the adobe-like block, in its cloth squeeze bag, is crammed into the bottom of the rounded bowl and sort of stuck to it.
We then use a funnel, pouring from the larger bowl into some 16 ounce brown glass bottles.
You could certainly weld or braze a nipple to the collection bowl, and run tubing from that, but I didn't have the equipment to do that. That would still be the best way to go, but I doubt that I'll ever get around to it.
