Just keep in mind you can use some yogurt (Acidophilus) starters to conrol flavor of Sauerkraut and Pickles for that matter.

EDIT

One more thing, don't skip the good salt part. Most critters need REEs to replicate and Salt is about the only way to get that today...or maybe a piece of Seaweed would work as well...
