It certainly sounds like you're describing fungal balls which are fungal form yeast in a biofilm that form in the gut lumen but don't attach to the walls. They are very different than mucus, ranging from very white to off white, with distinct to slightly smeared borders and almost look like you've passed a chunk of feta cheese or styrofoam.

Hopefully the Genova test will give you a clear answer.
