Aldehydes are toxins. They aren't usually in foods, except rancid foods. Candida makes plenty of aldehydes. Aldehydes are also in cigarette smoke, diesel fumes, and perfumes. The body metabolizes alcohol down to aldehydes, then needs a molybdenum based enzyme to break up the aldehydes. I guess it is the aldehydes that cause hangovers.
