You should heat milk or coconut water to 90 degrees whether you are using our starter or grains to ensure the microbiota have the right temperature to start working in. if milk or coconut water is to cold...below 90° you will delay the start of proper fermentation and milk will spoil instead of ferment. Temperature is one of the most critical elements of successful fermentation.
