I have given this a lot of thought, and additional research and believe that it is not the *gluten* per se that is the problem, although the higher the nitrogen use on the plants, the higher the gluten content... it is then the increase of nitrogen use, and thus higher nitrogen content of the grain that accompanies the increased amount of gluten as NPN.

NPNs increase the metabolic production in the body of ammonia, among other things.
