1. man as a whole, has always struggled to get nutrition right
2. man as a whole, has always abused the land
3. man as a whole, has always used one food or another to excess
that is why we find great civilizations of the past expressing certain *modern* diseases, such as cancer, diabetes, etc., albeit to a much lesser extent than we see today.
In addition, over the last several hundred years, starting about the mid to late 1600's, hybridization, monoculture, CAFOs (concentrated animal feeding operations), etc. have radically changed the nutritional spectrum\value of our food supplies.
In addition, over the last 150 years or so, chemical applications to our foods have skyrocketed, along with extensive pharmaceutical use in animals, feeding them things they were never designed to eat... ever, the introduction of GMOs has further exacerbated the issue, as has water, soil and air pollution of all kinds.
During that time, as the *modern medical establishment* took root, most *healers\doctors* blamed the individual for the decline in their quality of life as far as health goes... few looked at the radical changes to the food supply, ubiquitous chemical use and pollution, GMOs etc.
While individual choice does play a profound role... take away the *forced* changes to the way crops are manipulated and grown, (high protein this, high gluten that, and cides), and animals, reestablishing their diversity (many different available varieties of any one crop), and bingo... within a few generations we would likely be collectively on a healing path.
Not only through food, but through practices that would profoundly reduce the level of pollution applied to the planet daily.
