the only symptom that I was not sure of was the protein/blood in urine, so I did a search and sure enough it can be a symptom:

I've read that it takes an average of 7 years to diagnose celiac disease because the symptoms can be so variable.

Easy cure. eliminate wheat, barley and rye from your diet....
