That 'high and crash' feeling you describe is what I believe has to be the result of the candida being fed and multiplying. Why it results in a high and then low feeling I don't know, but I do know that that is exactly how I felt when I was still eating tons of Sugar (in my case mostly cookies and other sweets). Like a fool I also made smoothies using milk and TONS of fruit--e.g., two kiwis, 15 strawberries, a banana, tons of berries, etc. Needless to say the smoothies hurt me bad, I am sure. I would get so woozy sometimes after eating the sweets that it felt like I had been drugged. Nowadays, my energy level is MUCH steadier and more normal. I don't even feel drowsy in the afternoon after lunch anymore.
In sum, I don't know how or why eating Sugar makes those of us with candida feel good at first but then all groggy and terrible later. However, I do know that it's not die off, and I also know that it can't be good.
If you can tolerate some grains, that's great, but I know I couldn't in the beginning of the candida nightmare and still can't now. While grains don't make me feel bad per se, I see an immediate difference in my bowel movements after eating them, and not in a good way. Keep in mind, I am not one of those passionate "gluten free" people--back in the day, pre-candida, I used to eat all kinds of grains all day every day and was fine. It was only after the Antibiotics gave me candida that grains became an issue with me. So I would be careful with the grains if I were you.
