Hey! I'm not sure if you're still struggling, but I would like to help if possible! Alot of what you're going through sounds like what I went through about a year ago.

I had very bad anxiety and felt horrible...I went off gluten and life got remarkably better (Praise God)! I did have a period of about 2 weeks where I felt horrible after taking gluten out of my diet, they say that's the withdrawal period. Don't know if this will work for you, but I know gluten is related to a lot of neurological problems!
