reading your post, I can't help thinking about a lot of vegans who eat alkalizing food and are also really into the junk, often in the form of bread and other flour-based stuff. It may be that the wheatstuffs are a curious form of addiction that the the body is *using* (demanding)in order to keep from going too alkaline. Interesting.
