Hi Misty, here is the link to the bokashi unit I made, its easy, and it is clean, you can keep it indoors even. It basically ferments the scraps, it is a very efficient way of composting.

If you put the word "bokashi" into the search box at the top of the forum page, you will get lots of info on bokashi.
I even have a bokashi unit, outside, that I use to digest doggy doo :) which having 2 dogs, I have a lot of. The doggy doo then goes into the garden.
I also love happy chickens, and worms love bokashi tea as well.
