I also used to make a cilantro pesto and freeze it in ice cube trays. I find it absolutely delicious. I don't have the recipe in front of me but I think it had garlic, olive oil, and nuts (almonds?) in it. I'll have to look it up and make it again. I used to thaw and eat one of the cilantro pesto ice cubes a day and I think it helped.
