Because the Gospels only say that Jesus went 40 days with nothing to eat. Doesn't mention anything about him having nothing to drink. States he was hungry, not thirsty. Where Moses, it clearly states he had nothing to eat or drink.

As far as dry fasting goes, I haven't done any research on it so I can't imagine what the benefits would be other then dehydration!
