Excellent post and diet recommendations. I mostly agree w/ you.
Only thing I would toss in is that caffeine flogs the adrenals and people battling candida shouldn't get anywhere near it.
Also, I don't know your age but eating that much meat esp. beef might catch up w/ you some day; it's already working against you as seen by your chol. levels. Older people and people w/ kidney issues probably shouldn't consume that much animal protein. I keep stretching out how long I go w/out red meat. First every few days, then 1ce a week, then every ten days. It's been about 2 weeks now. I opt for fish, turkey, tofu, chicken, and some pork.
Also, I tried that "strict in the beginning" approach on the diet. I was able to do it about 5-6 weeks, 95% compliance, which felt about right since my die-off lasted about 3 weeks. But I'm now doing a slowly-turn-the-screws approach which I like even better. I have no desire to escape and indulge in something crazy. I cut out 1 ting at a time starting w/ the worst. You slowly morph your mindset and your lifestyle and you build a kind of momentum. To where now I'm fine tuning things, looking to cut out even the iffy stuff, minor stuff. But it doesn't feel like a sacrifice or require that much effort. Next couple of things on the chopping block are things that I'm ambivalent about like corn and potatoes. I've decided cooked carrots are ok...
It's amazing how all that Sugar craving - it's not really us that craves the sugar, it's the candida.
P.s. Just noticed "coconut flour" at Whole Foods the other day...... ?
