Yo Chiron, This one has been on my agenda for a long time.

Besides the Pinus species you mention many of the other conifers have the similar properties. Knowing them well allows use of the best for the particular time of the year, as the vit C content and taste change.

Curiously most of my infusions are green in colour not red??

The oil content is a beautiful addition to diet. Tasting just the raw leaves gives a good guide to their potential success as infusions. I have also included green needles in fermentations and eaten them in salads.

I have collected and used the pollen, but have not tried tinctures etc of the sap. Recently I have found a small stand of eastern white pine and shall try the sap of those when I can discreetly do so.

Thanks for the idea of using ACV tinctures. As cider season is just about on us that is another trial for this year. Thanks T2.
