I totally agree with the above posters regarding fat. Very very important

as far as egg yolks go, I have eaten plenty of them raw with no problems. There are three criteria for getting good eggs

LOCAL

FRESH

CAGE FREE

And preferably they should be fed a soy free diet. If you follow those guidelines the eggs will be fine to eat raw
