Raw dairy is by far the best dairy. And I'm convinced animal fats are helpful for most people (tho I also don't eat meats). It sounds like an efficient diet that covers a lot of bases - but living off of fruit juices and dairy sounds like a tough one to pull off.
I personally believe in more diversity than less in a diet as long as you're consuming unprocessed foods loaded with nutrients. I think highly restrictive diets should only be short term for a specific purpose.
Also Budwig isn't really about dairy. The point of the quark/cottage cheese and flax mix is not to ingest dairy fat but to make a sulpheric mix that oxygenates the body. Beyond that there aren't many other fats allowed in the Budwig diet and certainly no other dairy.
