To add to your excellent post, the refrigerator, along with pasteurization has contributed greatly to poorer quality foods...
Ferments sprouting, and other methods of preserving were the order of the day in times past.
Mom has told me of her mother fermenting foods in a large 50 gallon crock that they ate out of all winter long - that sat next to the wood\coal burning stove to enhance the fermentation process. Other people in the same boat did the same... in fact all cultures and peoples used fermented foods of some kind extensively in their diets, including unpasteurized beers, and wines.
These, in and of themselves (let alone the plethora of commercial production changes in the food industries), the refrigerator and pasteurization, profoundly changed our diets... there are MANY factors contributing to the dietary confusion of some people today who believe this or that without having any grounding in historical fact.
In just a few short generations, many have lost a great deal of reason and common sense... not to mention the great wisdom of our ancestors\elders.
