Is it possible to just develop SIBO of of nowhere and become very ill?

If you developed a deficiency in stomach acid, yes. Has your diet consisted of a lot of red meat?

I have also changed my diet completely to low carb no Sugar high fiber

Fiber is bad for SIBO.
