There are some benefits of cooking foods. It can make foods that are toxic or inedible in their raw state to become edible. However, what are the costs? Here's are some of the costs:
* Toxins are introduced in the cooking process. Fats become carcinogenic, proteins are denatured to the point where amino acids are unusable, starches turn to acrylamide, a nasty carcinogen
* Vitamins are diminished
* Minerals are diminished
* Fiber is broken down, becoming useless as a cleanser for the digestive system
* Water is diminished
* Phytonutrients are diminished
* Flavor is lost. To replenish flavor, substances that are not healthful are added to make the food taste better - salt, pepper, garlic, vinegar, condiments in general.
