I was much relieved to read your post lest you take what I said the wrong way or maybe I was to harsh and was thinking of deleting it when I saw your response.

I will reply to this later as someone is coming over soon but as far as the potassium, I look up some low potassium produce you could focus on if going raw which is highly recommended and high potassium produce to avoid and make a few comments, I will get you those links later.

Note: avoid canned fruits and veggies and I have read frozen ones lose the enzymes so focus on fresh or maybe dried (at a temperature not to high with a controlled temperature dehydrator) Raw not cooked for the most part.

of course there are dangers, too, to diets, low in potassium..I saw this is one of them

A search will show these dangers of not enough potassium..if any of these show up try to treat them and maybe increase potassium is all I could recommend.  It seems like you are between a rock and a hard place on this.

I would say go raw include some of the things hacres.com say are raw like the milks made from raw nuts, the dehydrated foods (be sure it is not heated past a certain temperature), the soaked oats in addition to produce), try to focus more on the low potassium produce,
and as he begins to have better kidney functions/health gradually start including more of the left out produce item to gradually increase potassium watching carefully how he reacts.

I feel the raw food, whole food vegan diet with juicing and green juices/smoothies along with the things in the 36 steps and incurables are the path to health for the kidney patient.  Miraculous healing have taken place with raw, organic, vegan foods.

As far as meats, I have as I sad read these are very hard on the kidneys. Some of the effects of low potassium diet are high blood pressure, strokes and things that meat would only help lead to.
