Brown rice does take a long time to cook- but how are you cooking it?

It is both easier to cook and far more easily assimilated if you soak it first (to remove the phytates that prevent mineral/vitamin uptake). Ideally, soak it in water and some lemon juice overnight. You will find that the grains are much softer and will cook far easier. Here are instructions;

1. Measure out 1 or 2 cups of rice.

2. Place in a bowl with water and a couple of tbsps of lemon juice. Cover and leave overnight.

3. Drain and rinse off the rice (to ensure most phytates are gone).

4. Measure out enough water to be 2.5 x the volume of the rice. If you used one cup, use 2.5 cups of water- if you used two cups, use 5 cups of water. Boil this water in a kettle.

5. Then, heat a little olive oil in a heavy bottomed pan. When it is hot, add the brown rice. Stir and shake the pan until every grain seems coated in the oil.

6. With the heat on medium, pour in the boiled water on top. Wait until it boils heavily, then put on a lid and turn the heat down very low. It should cook in only 20-30 minutes and be slightly "soupy" or wet if you soaked it properly.
