The ONLY downfall with brown rice is that it is likely to cause constipation. FOr that very reason I used to eat it with plenty of extra virgin oil - the tastes mix well - and the oil counters the constipation factor.

Glycemic index is a calculation of total carbs vs how much gets assimilated. For instance, there are carbs into psyllium but none gets to be assimilated. So the glycemic index is really the ultimate figure reagarding which grain/fruit to choose. It is a way of ranking carbohydrates according to their effect on our blood glucose levels.

Qinoa, millet and brown rice are the best on the candida diet. Quinoa has the advantage of containing some proteins, millet that of helping with Th1.

Brown rice - cooked, brown rice meal (like oatmeal), brown rice pasta or rice cakes are just great (make sure they do not contain sesame or other grains you would not want).

I like to eat pumpkin seed butter on my brown rice cakes in the morning Yummy!

With the pasta, I usually make pasta salad. Quinoa can be cooked as rice or eaten as oatmeal too.

You will also fin puffed millet and puffed brown rice which you can eat as cereal with soy milk (if you are not intolerant to soy- thyroid issue makes us intolerant to soy). When I was intolerant I used to make my own rice milk (commercial rice milk does not say so on the list of ingredient but they add rice syrup to the mix and it is therefore too sweet).

You will find these grains at your local health store.
