It becomes more acidic the longer you let it sit. Candida doesn't like Acid, so let it sit more than one day IMO. I let mine sit for 2 days before I start a new batch. I then place the milk in the fridge and let it sit another day.

Does anyone know how many days it takes for the Sugar in the milk to be consumed?
