Because the Kombucha is a live tea (the scoby and yeast are still alive), a new culture will form on the top. Most people refrigerate their bottles after 2-4 days. This slows (but does not kill) the cultures and yeasts. If what you have bothers you, simply run your kombucha through a filter before you drink it!
