The thing in your nose appears to be bone. The bone ends and cartilage begins. The reason the end of the nose is 'bendy'. ;)

You have a very beautifully shaped nose, though. ;)

The rest of the stuff looks like nerves/vessels. Hopefully someone who knows what they're talking about will be able to tell you if ALL of that is.
