i think its potassium bromate they use in bread.

i know what you mean about the list of ingredients. you KNOW all that stuff aint necessary. i have made brilliantly perfect loaves of bread with just the water from boiled potatoes, yeast, oil and flour. with no electricity. using a wood cook stove. i did it for years.
