Excellent post! I have tried to find recipes like this forever but keep finding the same old kraut & kimchee recipes that never seem to work. These recipes inspire me to try again.

Do you have a recipe for kimchee or any vegetable ferment that tastes anything like the kimchee you can get in a Korean restaurant?
