Your question: Indeed, I saw that answer after I submitted my post.

Indeed with the quick web searches I made, yogurt making require heating of the milk first up to 200F (but not boiling it), then after a while, cool it until it reaches about 110F. Then you add the bacterial culture. etc ...

The buttermilk making instructions I saw were all made at room temperature. Not all recipes, it seems, required special buttermilk bacterial cultures. Some were made with cream of tartar, others with lemon juice. I think I saw the brief mention of vinegar.

However, wikipedia mentions that yogurt making could go as far back as 4,500 years ago, and made by various cultures. I doubt that a process as old as that could not have been beneficial. I believe in time tested processes. I also doubt that all the yogurt made during this time was made as it is made now in modern time in the industrial era.

Answer: I did not say Yogurt was Bad if made correctly, but that the Buttermilk may be better for most folks with Adrenal problems!
